(From Jean Dickson: Make your own Liqueurs)

Ingredients

  • 300 g Violet flower petals
  • 1 clove
  • 3 whole allspice
  • 4 cm piece of cassia
  • 1 piece of mace
  • 1 star aniseed
  • 600 g (750 ml) sugar
  • 750 ml water
  • 1I vodka
  • Bottles: 2 x 750ml sterilised bottles that can be sealed.
  • 1 x 1,5 l clean and sterilised mixing bottle.

Method

Place the violets and spices in a pot. Add the sugar and water. Stir over a very low temperature until the sugar has melted. Bring to the boil and boil until the syrup has discoloured. Remove the syrup from the stove and leave to cool. Pour the cold syrup into a clean glass container with a tight-fitting lid. Add the vodka, close and leave to stand for a week in a warm spot. Shake every morning and evening. Strain the mixture through cheesecloth, repeating if necessary. Pour the liqueur into the dry, sterilised bottles, cork, seal and label clearly. Store for a month before use. Makes about 1.4 litres.
