You will need:
350g cream cheese at room temperature
70 ml milk
3 shallots or scallions, chopped
1 Tblsp butter
350g cooked spinach – well drained
350g cooked artichoke hearts or pieces
1 tsp fresh thyme
Salt and pepper to taste
What to do:
Preheat oven to 180°C.
In a pan, sauté shallots in the butter over medium heat till golden.
In a large bowl mix gently together the onions, spinach, artichoke pieces,
thyme, salt and pepper.
Mash together the cream cheese and milk and fold into the spinach mixture.
Turn out into a greased baking dish. Cover the dish and bake for 30 minutes until hot and bubbly. Open and cook for a further 5 minutes to darken the top.
Serve with crusty bread slices or toast.
