Here’s a lovely potato side dish that will go with any main – just add a fresh, leafy salad too! They also make wonderful nibbles on a picnic.

You will need:

3 cups of mashed Potatoes

2 large eggs

1/3 cup sour cream or yoghurt

1 heaped cup of grated cheddar cheese

2 Tablespoons grated Parmesan cheese

2 Tablespoons chopped herbs such as chives, thyme, oreganum, marjoram or parsley

Salt and pepper to taste.

What to do:

Preheat your oven to 180°C. Lightly grease about 9 of the wells of a muffin tray.

In a bowl whisk the eggs lightly. Mix in the sour cream or yoghurt. Stir in both cheeses and the herb / herbs of your choice. Add potatoes and mix well.

Spoon them into the muffin tray filling each one about 2/3’s full.

Bake for 25-35 minutes until they are golden brown and pull away from the sides.

Remove from the oven and let them cool for 5 minutes in the muffin tray.

Take them out and serve with a dollop of sour cream or yoghurt
