Let’s plan a picnic on the lawn for this afernoon!

Spread out a big bright blanket and enjoy a few quiet hours in the autumn sunshine.

Let’s start the menu off with a long tall mint-y drink:

Rosy Grapefruit and Mint cordial with Sparkling Rosé Wine

You will need:

About 4 Rosy Grapefruits. Use 2 for the segments and 2 for the juice.

2 cups Rosy Grapefruit juice

1 cup sugar

1 cup water

Handful of mint leaves – washed. Can use Peppermint, Spearmint or Garden Mint – even a Basil mint may be interesting.

What to do:

Peel and core 2 Rosy Grapefruit. Carefully break up into segments.

Place the segments on a lined baking sheet or freezer tray and freeze for a couple of hours / overnight.

Make a cordial syrup with the Grapefruit juice, sugar and water. Heat all these together gently for 5 minutes, stirring till sugar is dissolved. Add the leaves and bring back to the boil. Turn off the heat and allow to stand till the cordial is cool. Strain off the leaves and discard them.

Place frozen grapefruit segments into a tall glass, add cordial and top up with Chilled Sparkling Rose wine. Add fresh mint to garnish.
