Delicious ‘Something Sweet” for your picnic.
Lemon Thyme Tart
This is originally an old Hungarian recipe which has become a South African favourite. The one below is a Margaret Roberts adaptation using Apricot jam
and Lemon Thyme leaves.
You will need:
125 g melted butter
125 ml brown sugar
1 beaten egg
500 ml flour
2 Tblsp lemon thyme leaves
10 ml baking powder
3 ml vanilla
a pinch of salt
250 ml homemade apricot jam
What to do:
Whisk egg, vanilla and sugar together in a bowl.
Add sifted flour and baking powder alternatively with melted butter. Add lemon thyme leaves.
Knead well on floured board till it forms a dough.
Press 2/3 of the mixture into a greased pie plate.
Spread with apricot jam.
Grate the remaining 1/3 of dough onto the jam. Bake it at 180o C for 20 to 30 minutes – until starting to brown.
Leave to cool slightly and cut into squares or finger slices. Serve cold with a lovely cup of tea!
You could make this in small tart moulds so each person can have one.
